What is the white stuff on the outside of my chorizo?

It is a natural edible mold similar to the molds found on aged, soft cheeses. It's called Penicillium, and we inoculate our cured chorizo with it to help the aging process. The mold acts as a natural barrier to protect the chorizo from spoilage, and some believe that the mold aids in digestion as well.


Do I need to peel my chorizo?

Pintxo Charcuterie uses all natural hog and beef casings, so there is no need to peel the product, (unless of course you want to).


Is my cured chorizo safe to eat if it is soft?

Yes. Our chorizos are all tested to ensure that they are safe and ready to eat. Chorizo is a fermented product and meat is cured, not cooked. Because our chorizos are much fresher than what you will find at the store, they tend to be softer. If you let it sit out on your bench, it will dry out and harden a bit more.


How long will my cured chorizo last?

A really long time. Chorizo, as a cured meat, is a shelf-stable product, meaning, really, it has no expiration date. It will dry out the more it sits out, but it will never go bad on you.


Do I need to refrigerate my chorizo?

Technically, no. Our Chorizo is shelf-stable, so it doesn't require refrigeration, also it will continue to dry naturally. For best results, keep it wrapped in butchers' or greaseproof paper and put it in a cool cupboard or pantry. Do not freeze or put in a plastic container! This is a product that needs to breathe. Let it breathe!


are there preservatives, additives or allergens in your products?

No, we’re really proud that 100% of our products contain no additives, preservatives such as nitrates or nitrites, fillers, binders or extenders. We also have allergen controls that prevents cross contamination. Better still and naturally, no allergens such as fish, dairy, gluten, eggs, and nuts are used to handcraft our chorizo. Is Pintxo Charcuterie pork organically sourced?

We carefully source our meat from a select group of Free-Range New Zealand farms. They are chosen because they meet every criterion of sustainable farming and recognised animal welfare. The animals are grass fed. With no cages, no pens and only open paddocks.


Can I cook with Pintxo Charcuterie cured chorizo?

Can I freeze my cured chorizo?

No. The molds will die and you will end up with a sticky, slimy mess.
